Banana, Honey and Walnut Ice Cream

  • 2 cups milk
  • 1 cup honey
  • 6 egg yolks, room temperature
  • 1 13 cups whipping cream, beaten to soft peaks
  • 2 medium ripe bananas, peeled and mashed
  • 1 cup coarsely chopped walnuts

  • Combine milk and honey in medium saucepan.
  • Bring almost to simmer, stirring occasionally.
  • Beat yolks until pale yellow.
  • Gradually beat in hot milk.
  • Set bowl into a larger bowl filled with ice (or cover with plastic wrap directly on the surface of the custard and chill overnight).
  • Cool custard completely, stirring occasionally.
  • Fold in whipped cream and bananas.
  • Process according to ice cream maker’s manufacturer’s instructions, until half set.
  • Add walnuts and process until set.
  • Let ripen in freezer several hours before serving.

  1. This is a refreshingly different ice cream! The flavors all mix together very well, and the walnuts give it a nice crunchy texture. I made this using soymilk in place of the milk, and evaporated soymilk in place of the whipping cream, and it still came out nice and creamy. I thought the honey flavor was overpowering, however, and plan to reduce it to 3/4 cup next time I make this. Other than that, it was perfect! Thanks for a nice Summer treat, evelyn!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
