I found this gorgeous recipe in Ruth Isabel Ross' "Irish Baking Book", which I had originally given to my mum as a birthday present when spending a year abroad in Ireland. It is easy to make and just tastes so fruity. =)


  1. Pre heat the oven to 180°C and line a small baking tin with baking paper.
  2. Mix the flour, the baking powder, the sugar and the raisins/sultanas in a bowl.
  3. Add the egg and the well mashed bananas. Blend toghether (The dough should be soft and creamy.).
  4. Fill the dough into your baking tin and bake for approximately 45 minutes (or until inserted toothpick comes out clean).

This cake turned out quite nice...I used dried blueberries for the fruit and had to use 3 large bananas to get the consistency right..I cooked for about 1 hour in a fan forced oven as mine was still doughy in the middle at 45 mins...the texture is quite spongy, kind of like a microwave cooked cake but the taste was quite good. What a lovely and easy cake to make . It turned out so moist and I doubled the recipe using apricots instead of raisins - very yummy !

A very quick and delightful bread. I used raisins. I also added a 1/4 cup or so of sour cream to the batter so make it less dry and more creamier as described. Thanks, Lalaloula! Made for Veggie Recipe Swap 27, October 2010.
