I have fixed this so many times over the years, i have forgotten how many. it is great.

  1. Sift 1 cup flour with sugar, salt and baking powder.
  2. Mix egg and milk.
  3. Add to flour mixture gradually, stirring until smooth.
  4. Add shortening.
  5. Peel bananas, cutting crosswise into halves or quarters.
  6. Roll in remaining flour.
  7. Cover with batter.
  8. Fry in hot, deep fat (375°F) for 4-6 minutes.
