DD came up with these as a snack and/or breakfast muffin.
- Mash banana, add milk and muffin mix.
- Stir until combined.
- Pour into 6 muffin cups coated with nonstick cooking spray or in muffin liners.
- Bake at 350 degrees for 22 minutes or until golden brown on top.
- Cool and serve.
Loved these tasty and easy-to-make muffins! The nutty texture of the cornbread is a nice contrast to the sweet banana. Not something you would have with chili but a great morning treat or midday snack - thanks for sharing the recipe!
I love bananas and I love Jiffy corn muffin mix, but I do not love them mixed together. I didn't like the flavors and they were also too heavy and dense for me. Sorry.
