I had some left over ripe bananas and I am getting tired of making banana bread. Wanted a change and found this recipe. It really wasn't something that I would normally try, but I am glad that I did. These are wonderful, although next time I would skip the raisins and add chocolate chips instead. A real cakey cookie. I can't remember how many cookies I got out of a mix, so I will guess.

  1. Sift 1st four ingredients together.
  2. Mix next 4 ingredients thoroughly.
  3. Add dry ingredients.
  4. Blend well.
  5. Dough will be sticky.
  6. Stir in chips or raisins and bananas.
  7. Drop by teaspoonful onto greased cookie sheet.
  8. Bake at 400 degrees for 12-15 minutes. This is a soft cakey cookie.

Yum! 12 minutes at 400 in my oven was just right. After reading the "bland" reviews, I added cinnamon and coconut. Delicious!

Soft cake like cookies. I had one very ripe banana that I wanted to get rid of before it fell apart. I made half a recipe, using butter and raisins, adding a quarter teaspoon of banana flavoring in addition to the vanilla. Some people like these straight out the oven (kind of bland) still good, but I prefer them after they have cooled (sweeter and a little more flavorful).
