  1. Mix sour cream with lemon juice and honey. Coat banana cubes with sour cream mixture; roll bananas in toasted coconut. Serve on toothpicks or bamboo skewers.

I like the tart of the sour cream/lemon against the sweet honey, banana and gentle crunch of the coconut. I think these would also be good using plain yogurt instead of the sour cream. They are MESSY. I cut the banana in round slices. Next time I think I will cut those in half. Being smaller I think they will handle easier.
