Banana Carrot Cake

"From my mother-in-law. This carrot cake does not have a cream cheese frosting. I have not had this yet, but my hubby says it's wonderful. He says that he can't taste the bananas in the cake, but it's been years since he's had it, so that might be wrong. He says it's really good though."

  • Preheat oven to 350°F.
  • Combine sugar, banana, and oil.
  • Add eggs, one at a time, beating well after each addition.
  • In a separate bowl, combine flour, salt, baking soda, baking powder, and spices.
  • Add to banana mixture and mix well.
  • Stir in carrots and oats; mix well.
  • Spread in greased 9x9 inch baking pan. Sprinkle with nuts.
  • Bake at 350F for 40 minutes or until toothpick inserted in center comes out clean.

  2. YUMMMM!! I used whole wheat pastry flour and palm sugar, and couldn't not put a cream cheese icing on top! Served up at a dinner party and even the dieters took seconds. Moist, flavorful and addictive! I'll definitely make this one again.
     
  3. Three & a half stars. Cooking adjusted to 325°F for dark nonstick baking pan. Tastes all right with nice banana aftertaste. However, this is not the carrot cake that I usually make (per 'The Joy of Cooking'). And I added a half cup of raisins plus cream cheese frosting along those lines, but the flavor was more like a pineapple carrot cake, which we do eat. I am.impressed that it tastes so good without having to include granulated sugar ??
     
  4. This was so moist and yummy. I kid you not my husband ate half the cake in 25 hours. I froze the other half or that would have been gone too. First you taste the banana then the carrot comes in second. I made a cream cheese frosting because....carrot
     
  5. Delicious! I put a piece of foil over top at 30 minutes to keep it from browning too much.
