Banana Caramel Pudding Cake

  • Preheat oven to 350
  • Combine brown sugar and 2 teaspoons flour, set aside.
  • Combine 1 1/3 cups flour and next 7 ingredients in a medium bowl, stir with a wire whisk.
  • Make a well in the center of mixture. combine banana and next 3 ingredients, add flour mixture, stirring just until moist.
  • Pour batter into a 8 inch square baking pan, sprinkle with brown sugar mixture.
  • Pour 1 1/2 cups boiling water over batter (do not stir).
  • Bake at 350 for 40 minutes or until pudding is bubbly and cake springs back when lightly touched in center. serve warm.

  2. I thought this turned out great, but my kids rejected it unfortunately. I won't be making it again. Maybe its more for adults.
     
  3. My Husband just loved this cake. The word he describe the cake was.....Outstandingly good! Thanks for the recipe! Here is what I did different, I just greased the pan heavly with real butter. I love butter in the carmel sauce, and it turned out Yummy. A husband approved recipe for sure.
     
  4. Awesome! We inhaled this for dessert tonight. I love pudding cakes: they're generally low fat, quick to make, and can be prepared in the oven while the main course is baking. Pudding cakes have a cakey top and a sauce underneath, they are not typical cakes, and are best served warm. Banana is a great variation, and this definitely goes into my Banana Rama cookbook as I'm always trying to get rid of overripe bananas. Lots of sauce with this one which complimented the banana cake nicely. Whipped cream would be good, but is not necessary. I left out the pecans cause the kids don't like them. Thanks so much for sharing your recipe!
     
  5. I was really excited to try this because I love pudding cakes and had never tried a banana one. I liked the cake part of this but was a little disappointed by the caramel part. It was more like a sugar sauce than a caramel sauce and I wasn't expecting that. The cake was moist and flavorful and I might play around with the recipe later.
