- 118.29 ml margarine
- 354.88 ml white sugar
- 2 eggs
- 236.59 ml mashed banana (3-4 bananas)
- 59.14 ml milk
- 473.18 ml flour
- 9.85 ml baking powder
- 3.69 ml baking soda
- 2.46 ml salt
- 4.92 ml vanilla

- 19.71 ml flour (heaping)
- 236.59 ml milk
- 236.59 ml sugar
- 118.29 ml margarine
- 118.29 ml shortening
- 4.92 ml vanilla
directions
- To make cake: Mix margarine, sugar and eggs together.
- In separate bowl mash the bananas and add the milk. Once mixed, add the banana mixture to the margarine, sugar and eggs.
- In separate bowl mix the remaining dry cake ingredients.
- Mix the dry and wet cake ingredients together.
- Pour into 9 x 13 inch pan and bake at 350 degrees Fahrenheit for 35 - 40 minutes. Cool to room temperature.
- To make icing: Mix the flour, milk and sugar in a small sauce pan.
- Cook to boiling stirring continuously. Cool to room temperature.
- In a separate bowl whip the margarine, shortening and vanilla.
- Mix the cooled pudding mixture with the whipped marg/shortening mixture until fluffy.
- Top cooled cake with icing and enjoy!

I like this cake much more than my husband. He said it was a cake he would eat it put in front of him but nothing he would request. To say the least, that shocked me coming from him!!! I would like to offer a piece of advice on the frosting. zbe VERY careful with your heat while cooking the milk mixture, or it may scorch and that would be disasterous for the frosting.

I love to cook using fresh, healthy ingredients. I love shopping at the local farmer's market and seeing a huge basket of fruit on my counter and crispers full of vegetables in my fridge.
Lately I've also been more and more interested in eating foods that are grown locally and in season. I'm very interested in reading the books, The 100 Mile Diet and Barbara Kingsolver's book, Animal, Vegetable, Miracle (I haven't read either of these books yet, just heard interviews). I am a SAHM/teacher. Mostly I stay at home with my three children (2 girls, ages 7 and 9 and 1 boy, age 2). A few days a week I do some substitute teaching. I really enjoy what I do.
