Banana Cake With Homemade Pudding Icing

"This cake does not last long in our house. In truth I think it's the icing that makes the cake, but the moist cake is fabulous too. It freezes great as well."

  • To make cake: Mix margarine, sugar and eggs together.
  • In separate bowl mash the bananas and add the milk. Once mixed, add the banana mixture to the margarine, sugar and eggs.
  • In separate bowl mix the remaining dry cake ingredients.
  • Mix the dry and wet cake ingredients together.
  • Pour into 9 x 13 inch pan and bake at 350 degrees Fahrenheit for 35 - 40 minutes. Cool to room temperature.
  • To make icing: Mix the flour, milk and sugar in a small sauce pan.
  • Cook to boiling stirring continuously. Cool to room temperature.
  • In a separate bowl whip the margarine, shortening and vanilla.
  • Mix the cooled pudding mixture with the whipped marg/shortening mixture until fluffy.
  • Top cooled cake with icing and enjoy!

  1. I like this cake much more than my husband. He said it was a cake he would eat it put in front of him but nothing he would request. To say the least, that shocked me coming from him!!! I would like to offer a piece of advice on the frosting. zbe VERY careful with your heat while cooking the milk mixture, or it may scorch and that would be disasterous for the frosting.
     
  2. The cake was very tasty and moist. However, I would have preferred a different frosting. Maybe just buttercream frosting. My 11 year-old daughter made this all by herself for Chemistry Class. This was a very easy recipe for her to make.

  4. Delicious! I love this frosting. I added just a little bit of ground cloves to the frosting and it gave it a nice hint of flavor. The cake is moist and tasty, but it's the frosting that really makes this excellent!

I love to cook using fresh, healthy ingredients. I love shopping at the local farmer's market and seeing a huge basket of fruit on my counter and crispers full of vegetables in my fridge. My interest in eating foods grown locally and in season was piqued after I bought and read the cookbook, Simply in Season. If you're reading this and have similar interests shoot me an email, I'd love to chat about this more and be inspired by you and your recipes. I am a SAHM/teacher. Mostly I stay at home with my three children (2 girls, ages 7 and 9 and 1 boy, age 2). A few days a week I do some substitute teaching. I really enjoy what I do. For fun I like to scrapbook, take pictures, read, and spend time with friends. I'm also finding I really like to cook.
