directions

  • Cream butter and sugar, add egg and soda thats been dissolved in the milk, then add bananas and dry ingredients and vanilla essence.
  • Mix well.
  • Bake in 8 inch square pan in moderate oven (350F or 180C) for 30-40 minutes or until skewer comes out dry.
  • Ice with favourite icing.
  • I use a chocolate butter icing.

  1. i found that if you ice the cake with 250g of phillidelphia cream cheese and 4tsp of fresh lemon juice.....it truly puts the icing on the cake...this a great cake that many aussies really enjoy!!...easy and a fantastic taste..very filling also!
     
  2. Made this as a quickie when my son showed up with his girlfriend. I used 1 1/2 cups of toddler banana babyfood, which is the quick equivalent of mashed banana. I added walnuts. Baked and served in an 8x8 glass square pan. Blended together 8 oz. cream cheese with 1/2 cup of sugar for a quick frosting. Got rave reviews fresh from the oven. It was even better when we polished off the last chilled pieces later that evening. This is a keeper.
     
  3. Don't throw out those too-soft bananas, make this delicious easy cake! This recipe was really good although I had to increase the cooking time a little. I cooked it in a loaf pan and used a vanilla butter icing. Very good!
     
  4. I doubled the recipe and made a fabulous layer cake, with banana filling.
     
  5. I found this very easy to make and I put some chocolate chips in the mixture it was deliciouus

Tweaks

  1. Added 1 tsp cinnamon, 1/4 c finely chopped walnuts and 1/2 c white raisins/sultanas. Frosted with creamy peanut butter frosting, recipe also on Genius Kitchen. Great Sunday dessert!! Thanks!!
     
  2. really yummy! forgiving and flexible recipe. I actually changed it up by adding a couple of handfuls of different grains/seeds,substituted 1/4 of the flour with wholemeal flour and sprinkled rolled barley on top before baking, as well as cutting the sugar down by half, and it was still moist & plenty sweet.
     
  3. I love this cake! I did however put applesauce instead of butter it cut back on the calories and it tastes the same.
     
  4. Very nice cake - quick to put together and tastes great. I frosted with cream cheese frosting and my co-workers loved it! I did substitute applesauce for a little of the butter to reduce the fat with great results.
     
  5. DD (3) and I made this for our cooking time today as she wanted banana cake instead of banana bread. Very easy, quick to make, and so yum! I did grease and flour the pan (recipe didn't specify), and it came right out after cooling a bit in the pan. Also, I had to guess as to the amount of butter (125 grams = how many tablespoons?); we used 1 stick plus 1 TBS and it turned out fine. It did take 40 minutes to bake, but I think my oven is off. Definitely a keeper.
