A good cake to use up overripe bananas. Always given good comments about this.

  1. Preheat oven to 180 degrees celcius.
  2. Grease a 20cm round springform tin.
  3. Cream butter and sugar and slowly add the eggs and vanilla.
  4. Add the bananas.
  5. Dissolve soda in milk and mix into the mixture.
  6. Fold in flour with a metal spoon.
  7. Cook for about 70 minutes or until the cake springs back when tapped gently.
  8. Leave in tin for 10 minutes then turn out.
  9. To make the icing: Cream the butter and then add the icing sugar; add the lemon to taste (I often use more as I like it really lemony!).

Wanting a change from the usual recipe I use, I tried this one earlier today with wonderful results. A nice moist cake, it rose well and tastes great. I would have to say better than the old recipe I was using, so I will definitely be making this again soon. I made my cake in a loaf pan and baked for 45 minutes. Thanks Tracey_B!
