Ok, it may be my own stupidity, but this makes more than one loaf. I tried to make one loaf and it bubbled over in the oven and caused a huge smokey mess! I had to throw mine out because it just wouldn't cook all the way through. Advice: make this into two loaves!
This is a great thermomix recipe. Only thing is it wasn't lumpy so I added another 1/2 c of flour. I also sub the plain flour for SR flour & added 1/4t baking powder. Can't wait for the to get out of the oven!
This will be my go to Banana bread/cake recipe from here on out. It turned out super moist, not too sweet w/ right amount of spice. The olive oil made this so tasty. It makes a lot, so I buttered

This was fabulous! It wasn't too sweet and I used 100% w/w flour and it rose beautifully and it stayed light and spongy and fluffy! Yum!
This is a nice, moist bread with good flavor, and is a different way to use leftover coconut milk. You didn't specify what size loaf pan--I used a 9X5-inch and it worked perfectly. However, the baking time given, at least for me, is not nearly long enough for a loaf this size. I baked mine for a full hour, and it really needed another 10 minutes or so. It seemed to be browning too quickly, so I tented with foil the last 20-25 minutes. Thanks for sharing the recipe.
Thanks so much for a way to use up coconut milk! I did not think you could really taste any coconut flavor, but it was a good banana bread anyway.
