Banana Bread Oatmeal

"A delicious breakfast recipe from the people at Quaker Oats! The toasted pecans make it a real treat, and it can be dairy-free if soy milk is used (and soy yogurt, if desired)."

  • In medium saucepan, bring milk (or soy milk), brown sugar, spices and salt to a gentle boil (watch carefully); stir in oats.
  • Return to a boil; reduce heat to medium.
  • Cook 1 minute for quick oats, 5 minutes for old fashioned oats, or until most of liquid is absorbed, stirring occasionally.
  • Remove oatmeal from heat.
  • Stir in mashed bananas and pecans.
  • Spoon oatmeal into six cereal bowls.
  • Top with yogurt (or soy yogurt), sliced bananas and pecan halves, if desired.
  • Tip: To toast pecans, spread evenly in shallow baking pan.
  • Bake at 350°F 5 to 7 minutes or until light golden brown.
  • Or, spread nuts evenly on microwave-safe plate.
  • Microwave on HIGH 1 minute; stir.
  • Continue to microwave on HIGH, checking every 30 seconds, until nuts are fragrant and brown.

  2. This is delicious! The only change I made was using walnuts instead of pecans (I didn't toast them either just to save a few minutes, but I'll try them toasted next time).

  4. Kree, this is SUPER DELICIOUS! I had this for breakfast this morning and loved every spoonful of it. I did not have nutmeg on hand, so I used cinnamon instead(2 tsps. in total). I substituted the brown sugar with white granulated sugar. I did not top it with anything, because it was GREAT all by itself. Thanks so much for such a good oatmeal banana breakfast!
     
  5. Loved! I used walnuts instead of pecans, and instead of yogurt, I drizzled the top with heavy cream :) Topped also with a few blueberries.

  1. This is wonderful! My only eats instant oatmeal husband had a bowl of this today and asked that I make it on a regular basis... High praise. Followed the recipe, using rolled oats, except for candying the pecans in a skillet with a little butter and Splenda before adding them to the mix. Husband added a handful of milk chocolate chips to his, I added a spoonful of natural peanut butter, and the picky 4 year old added both to his, but then ate the whole bowl, so it's all good. Will definitely make this again. 8/17/10 Made this with quinoa instead of oats, and it's equally wonderful. Cooked the grains in water with some butter, added the spices while cooking, then stirred in the banana and some plain yogurt for creaminess. Fantastic!
     
  2. Very yummy! I usually don't care for oatmeal, but I like to have a hot healthy breakfast when it's cold out and this hit the spot! I used soy milk and old fashioned oats and walnuts instead of pecans. I topped it with plain yogurt and a sprinkle of dried cranberries. I'm going to make this into a quick mix so I can bring it to work. Thanks!
