Here is a banana bread recipe from "Fat Free, Full Flavor." Add spices and nuts if you wish.
- 6 ripe bananas
- 1 cup sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- Mash the bananas, sugar and vanilla together.
- Sift the flour, baking powder and soda together.
- Mix the liquid with the dry and pour into a 7.5 x 3.5 x 2 inch loaf pan.
- Put into a preheated oven at 350°F for one hour.
I hate to leave a bad review, but this banana bread was awful. I am sorry...I wanted it to be great, but it just didn't have any real oomph. It was bland and doughy even though I extended the cook time by nearly half! It looked great, smelled like banana bread, but it tasted like gummy bread dough with a hint of banana. I don't even know how to describe it...I took it to a friends house for dinner and the dog and cat both loved it! Even with the spiced cream cheese icing, this was a sad excuse for food, not to mention dessert.
