This is based on JoAnna Lund's "Best Banana Bread" recipe from her cookbook 'Cooking Healthy with Splenda'.

Yum! Nice and moist and very tasty. You'd never know it was "good for you." Next time I might try substituting 1/2 cup of the flour for whole wheat flour.

  1. Preheat oven to 325 degrees Fahrenheit.
  2. Spray a 9-by-5-inch glass loaf pan with butter-flavored cooking spray.
  3. In a large bowl, combine Splenda sugar, unsalted butter, and eggs.
  4. Mix well using a wire whisk.
  5. Stir in mashed bananas.
  6. Add flour, baking power, and baking soda.
  7. Mix gently using a sturdy spoon.
  8. Evenly spread batter into prepared loaf pan.
  9. Bake for 45 to 50 minutes or until a toothpick inserted in center comes out clean.
  10. Place loaf pan on a wire rack and let set for 10 minutes.
  11. Remove banana bread from pan and continue cooling on wire rack.
  12. Cut into 8 slices.
