Easy and makes just one loaf.
- 1 cup sugar
- 1⁄4 cup butter
- 1 egg
- 3 bananas, mashed
- 1 1⁄2 cups flour
- 1⁄2 cup chopped nuts
- 1 teaspoon baking soda
- Mix all ingredients, except the soda with mixer.
- At the last add the 1 tsp soda dissolved in a little water.
- Put in a greased bread pan and bake for about 1 hour and 15 minutes.
- This makes just one loaf of banana bread.
Very simple I add nutmeg and cinnamon. Very tasty. I made them in muffins backed at 350 degrees for 30 mins. I did add the baking soda in the bananas works out great.
This was a good easy recipe to do, but it was not done after 40 minutes. I used a 9x5x3 pan and I cooked it at 350 degrees F. - it took closer to 1hr 15min to cook through. And make sure you grease the pan! :) The second time I made it, I creamed the butter sugar & egg together, and dissolved the soda in with the mashed banana to mix it instead of water. It worked out slightly better that way in the end. My guys here all loved it, both times I made it. And I like it because so far it's the only recipe I've found that makes a single loaf...which is especially appreciated when trying it for the first time.
