Banana Bran Muffins

ingredients
- 1 cup bran buds
- 1⁄2 cup vanilla yogurt
- 1⁄8 cup Splenda Sugar Blend for Baking
- 1 cup wheat flour
- 4 teaspoons baking powder
- 2 eggs
- 3 1⁄2 tablespoons butter, melted
- 1⁄2 cup applesauce
- 3 bananas, mashed
- 1 teaspoon vanilla
- nuts, chopped
directions
- Combine Bran Buds and yogurt and let sit for 1 hour.
- Preheat oven to 400.
- Combine remaining dry ingredients.
- Add eggs, butter, applesauce, banana and vanilla to the bran and yogurt mixture and stir.
- Add dry ingredients and nuts to the above mixture.
- Mix, but do not over mix.
- Spoon into greased muffin tins.
- Bake 10-15 minutes.

We each had two of these right out of the oven, & delicious & satisfying, they were! Thankfully they aren't as dry as many bran muffins seem to be, so that's a definite plus! I think the bananas & apple sauce really add to them! Thanks for sharing the recipe! [Made & reviewed for the closing of Pick A Chef event]
