Banana Bran Muffins

ingredients
- 1 cup all-bran cereal
- 1 cup banana, mashed
- 2⁄3 cup milk
- 1⁄3 cup brown sugar, firmly packed
- 1⁄4 cup vegetable oil
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 1⁄2 cups all-purpose flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
directions
- Preheat oven to 375 degrees.
- Combine bran cereal, bananas, and milk in a large bowl, stirring well; let stand 5 minutes.
- Add sugar, oil, egg, and vanilla; mix well.
- Combine flour, baking powder, and salt; stir into bran mixture just until combined.
- Spoon batter into a paper-lined muffin pan.
- Bake at 375 degrees for 20 to 25 minutes.

I must say, my hopes weren't high but I decided to try these. I have an old, favorite banana muffin recipe that I've been using for years and my husband is absolutely in love with it. He's gone on a recent dieting and exercise kick (with great results!) which makes my old recipe was a no-go. PCrocker's recipe is simple, straightforward and, most importantly, absolutely fantastic! I even 'ruined' the recipe by substituting the oil with unsweetened applesauce and replaced 1 cup of the all-purpose flour with whole-meal flour. (To make the muffins about 110 calories each-like the 100cal snack packs, but far tastier!) Even that couldn't mess these up. This is a great bran muffin -- not too sweet, not too dense and the bran doesn't overpower the flavor of the banana. Thanks for posting, PCrocker. My husband is over the moon and has already put aside some bananas to over-ripen so we can use them for the next batch.

As soon as I did it I knew something wasn't right. Have always used a tried and true recipe but decided to try something different. Followed directions to the letter, but as I was adding the baking powder I knew your directions must be wrong. Sure enough, all we could taste was the baking powder. I'm sure you meant 1 tsp. and NOT 1 Tbs. Please make the correction before someone else has to throw them out!

This is almost identical to a recipe that I have been using for many years, the exceptions being that I add 1/2 tsp. cinnamon and 1/4 tsp. ground cloves to the batter. This recipe is so easy, and a great way to use that "last banana". This is also a much "kinder" way to get fiber in one's diet without having to "power down" a bowl of plain bran cereal---lol.
