After finding the reduced priced bananas in produce and using half for muffins I sought out a recipe for the remainder...not finding exactly what I was looking for...something not to thick, not to thin, but just right and nice to the waist-line... I got creative, this is the result.

Directions

  1. Mix all ingredients except blueberries.
  2. Fold in blueberries (I mixed mine in while still frozen).
  3. Heat skillet on medium heat.
  4. Pour batter to create 3" dia pancakes.
