Banana, Beans, Corn and Greens from Tanzania

Found this in my great banana recipe search. My bananas frequently ripen all at one time. In Tanzania it is either served next to a grilled meat or as a meal.

Ingredients Nutrition

  • 6 green bananas, peeled and mashed
  • 4 ears of corn, shucked and off cobb (I cheat with frozen out of season)
  • 2 cups green beans, cut to 2-inch
  • 1 bunch greens, large and chopped (any you have, collards, spinach, cabbage, pumkin leaves, chaya, etc.)
  • 2 cups coconut milk (regular milk ok)
  • salt

Directions

  1. Zap the corn and beans al dente in your microwave.
  2. Add bananas. Cook for about 10 minutes on top of the stove.
  3. Add greens and cook til just done.
  4. Add milk, mix well and reheat without boiling.
  5. Season to taste and serve hot or cold.
