I developed this recipe because I love homemade banana bread but wanted a recipe that didn't include oil or butter. This recipe allows me to enjoy the flavor without all the fat.

  1. Grease and flour 4 mini loaf pans. Preheat oven to 350°F (175°C).
  2. In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, applesauce, and mashed bananas. Pour into prepared pans.
  3. Bake at 350°F (175°C) for 40 minutes, or until a wooden toothpick inserted in the center comes out clean.

This was just perfect! So moist and yummy. I made as directed, but added some cinnamon for our liking. This is one that will go in my pile of recipes to keep :)

Great recipe! Fast and easy. I cut down the sugar by half ... and it still works beautifully. Thanks Michelle HB! I will continue to tinker for extra roughage...

Fast and easy recipe. I followed instructions exactly - but added some raisins and pine nuts. Delicious - and you don't miss the fat.
