Banana-Apple Bran Loaf

  • Stir together flour, soda, salt and cinnamon. Set aside.
  • In medium bowl, stir together banana, applesauce, milk and KELLOGG'S ALL-BRAN cereal. Let stand about 5 minutes or until cereal softens.
  • In large mixing bowl, beat margarine and sugar until combined Add egg. Beat well. Mix in cereal mixture. Stir in flour mixture, mixing until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.
  • Bake at 350° F about 50 minutes or until wooden pick inserted near center comes out clean. Let cool 10 minutes in pan. Remove from pan and cool completely before slicing.

  1. So nasty I threw it out! I did use Stivia instead of sugar. That probably did not help. I've figured out I'm just not a fan. Weird after taste.
     
  2. Excellent bran bread (and a bit easier to make than muffins). I used Kellog's Bran Buds (shorter pieces than All-Bran) and 1/3 cup butter, adding in 2 extra tbs. of applesauce to make up the difference. I use this amount of butter/applesauce for all my bran muffin recipes and it always works out! I used a long wooden skewer to check for doneness, since it's hard to tell in banana/bran recipes. This was very flavorful and had a good crust. I did add a few dried currants and cranberries to it, too. Thanks for posting, Senseicheryl. Roxygirl
