  • Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
  • In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients – flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
  • Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
  • Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

  1. So I was excited to find this recipe. It easily became vegan with almond milk and applesauce ( with a little extra baking powder) I doubled vanilla and put at least a tsp of cinnamon in it. How can you do apples without lots of cinnamon. I left out nuts but double cranberries or raisins, depending on the batch. Its been a hit, my version batter pretty thick. I also tweeked temp to 370, and did about 17 min for one of my tins. (All muffin pans are not the same, at least at my house) and had to do 20 on my taller muffin tins. Yummy
     
  2. Thea came out great, however, instead of plain pats I used kashi honey nut oats and I added 6oz of unsweetened applesauce, as well as an organic crumble topping. They're a huge hit and everyone wants more!!!

  5. I used 1/2 cup of sugar and omitted the raisins. This muffin is so tasty with the mashed bananas and the chopped apple. Thanks Dottygumdrop :) Made for PAC Fall 2011

Tweaks

  1. Very poorly. I baked for more than 40 minutes and they were still mushy in the middle. They've been baking nearly an hour and still pretty inedible. I clearly did something wrong but not sure what since I followed the recipe
