  • In a large bowl, put the baking powder and flour. In a smaller bowl, mix the beaten egg, the All Bran, the milk, mashed banana, and the vegetable oil. Let this mixture soak for five minutes and then add to first mixture. Mix together and then add walnuts and raisins. Bake in a preheated 350 degree oven for 20 minutes.

  1. Got rave reviews from family and friends. They said muffins were light and delicious. I left out raisins (because I don't like them-which was dumb because I can't eat these muffins due to dr's orders); apparently they were delicious without. Had to make a double batch the next day to satisfy the hordes :)
     
  2. I gave this recipe 4 stars. Yum! This is a very good recipe. My 6 yr old newphew and I loved these muffins. I made minor change to the recipe. I used Splenda sugar mix for the sugar. I also used golden raisins. Overall these were so yummy and I will make these again! Christine (internetnut)

  1. the recipe is great....i'm making a lot of muffins these days..cause my 92 year old mom....just got out of the hospital....and we're wanting to eat healthy...but just keeping appetite going is the main deal.....so the original recipe...is perfect if you're wanting to be health conscious...however...gulp...we didn't have all the ingredients...so here's what I did to make them a little less healthy--gulp--so instead of the skim...eeks...I put in heavy cream..then, did the walnuts and raisins but added coconut and cranberries...and the two eggs....I put the entire egg in the mix instead of just the egg whites...wow, yummy...and the last tweak you're not going to believe....I had half a cup of all bran...so I decided to whirl up a fancy granola with ancient grains in it to fill out the rest of cup of cereal.....yeah, took a chance....holy cow...those muffins were amazing....like bed and breakfast amazing.... --mark hyman, Casper, Wyoming
