This is really good. I used 1/4 cup chopped red onion and 1 tsp minced garlic cloves since I didn't have any shallots. The rest was the same except I didn't take the skin off the thighs because I was in a hurry, but I won't do that again - way too much grease. I went ahead and cooked the chicken in the sauce much longer in the end to let it reduce and it really adhered to the chicken very well. I made it for lunch today and saved a couple pieces for my husband. He had them when he got home from work and is ready for me to make more. :-) This is a solid 4.75 stars from us! We thought this was just ok...and I thought my husband would LOVE it because he is a balsamic fanatic. Sorry, but it just didn't have that much flavor.

This was a great, quick, healthy recipe! I was surprised by how much I liked it considering there are so few ingredients. I did use a very good quality balsamic and minced onion (because I was out of shallots). I also sprinked some garlic powder on the chicken for extra flavor. Served with peas and roasted potatoes. Yum!

With the economic times hitting us here at home I have been stocking up on cheap chicken. Needing to find a "change" for chicken, I came across this recipe and was pleasantly surprised. When I polled the children whether they liked this or fried chicken this one was 5 to 0! The only thing I did differently is subbed legs for the thighs and I didn't have shallots/onions so I used dried minced onions and a little garlic salt. Yummy! Thanks for sharing!
