Easy weeknight dinner. Serve with Garlic Mashed Potatoes, Broccoli or Green Salad. Enjoy!
- 3 lbs beef roast, boneless
- salt and pepper
- 2 tablespoons herbes de provence, dried
- 4 garlic cloves, smashed
- 1 cup balsamic vinegar

- Spray large skillet with cooking spray; heat over medium high heat. Cook beef in skillet, turning beef about 5 minutes, or until all sides are brown. Sprinkle with salt, black pepper and herbs de provence.
- Place smashed garlic in slow cooker; place beef on top of garlic. Pour vinegar over beef. Cover and cook on low heat 6-8 hours, or until beef is tender.
