    Super quick and super easy dinner that is extremely high in protein and very low in carbs and fat. I make this as a simple after-work/gym dinner with a green salad.

    Directions:

      To a non-stick frying pan add onion and garlic. Fry, adding a little water or oil if necessary, until softened.
    2. 2
      Add chicken, olives and 1/2 cup vinegar. Cook, stirring, until chicken is done through and vinegar is caramelizing. Add the extra tablespoon of vinegar for the last 30 seconds of cooking.

      Garnish, season and serve.

      I love olives, but my family isn't crazy about them and worried that the vinegar and the olives would over-power the chicken. As it is, I probably should've doubled the recipe because there was nothing left for lunch the next day.

      Tasty and quite simple this dish is. I doubled it, using jarred green olives stuffed with pimentos (cut them in half) and a little extra garlic. (must have a little more garlic for my sister and I) :) I left out the parsley. It was very easy placing everything into the pan and letting it go; took quite a while to cook. Though, I believe that was my fault. I thought the vinegar should be all but dried up. Turns out everyone would have loved to have some extra sauce. My fault! The flavor was fantastic, and I loved eating the leftover onions and olives by themselves even. Served with a green salad with oil and more balsamic vinegar. Thank you for a simple and flavorful meal!
