Nice zip from the jalapenos. I used the suggestion to make individual servings in ramekins, as there were only two of us. Thanks for sharing!

We really enjoyed this with our Mexican themed dinner party tonight. However, next time I think I will substitute the jalapenos for a can of rotel tomatoes with chilis. It was one of the best Mexican rice casserole dishes I have tried!

Fabulous! This will go into my Favorites for 2009! I absolutely loved this combination, and I am not a rice lover. Don't leave out the jalepenos! I think they are what make the recipe. I will have to make this again without them to satisfy other's in the house, but for me this recipe is absolutely perfect as is! Made for 2008 Favorites Cookbook Tag!

This recipe made it into our Book #231450. 8/9/08 - Yes, real bacon and lots of it! Think of this as a loaded baked potato, just with rice. I made 2 individual servings just rough estimating the amounts into 1-cup sized ramekins. I used all cheddar as that was all we had and omitted the jalapenos for personal preference. After they baked and cooled, I removed them from the ramekins and placed them onto serving plates for presentation. The sour cream adds a wonderful creaminess to the rice. Next time I will try it with some american cheese and cream cheese. This was fun to make and alot like layering a lasagne. It has many wonderful flavors and Buddha already wants me to make this again. Thanks for posting. :)

Whats not to like about this recipe? Like 2Bleu said it is like a loaded baked potato but with rice. I made this for lunch today for myself so cut the recipe down to 2 servings. Thanks for sharing Loof. Made for 123 Tag.

Great tasting rice... I did omit the jalapenos & added some cayenne pepper to the rice as it was cooking. I agree with Babychops, use real bacon for this dish. Made for 123 Hits

This was FANTASTIC!!! You wouldn't think looking at the ingredients but boy was it tasty! The only thing I didn't have on hand was fresh jalapenos so I used a 4oz can of diced green chilies... Don't skimp & take the bacon bit train, take the time & cook up some bacon, I was glad I did, it really gives this a lovely flavor... There wasn't much for leftovers, this was absolutely DELICIOUS! A MUST try and definitely a keeper!!! Thanks so much for sharing Loof! Please forgive the paper plate in the photo, we're packed up to move & don't have any nice ones out... Sorry I didn't get a photo of the dish whole in the casserole, it smelled too good & we attacked it as soon as it was out of the oven... Do yourself a favor & try this one night. Good enough for entertaining!!!
