  • Combine flour,sugar,baking powder & salt, then cut in 1/4 cup butter till mixture resembles coarse crumbs.
  • In another bowl combine milk and slightly beaten egg. and add all at once to dry ingredients, stirring just to moisten.
  • Combine juice from berries with water to make 1 cup liquid.
  • In a medium saucepan, combine berry juice,cornstarch and sugar; cook till thickened then add berries and butter and cook till hot.
  • Pour filling into a buttered 8" square baking dish and immediately spoon on biscuit topper in 6 mounds.
  • Bake at 400 degrees for 20-25 minutes.

  1. I used fresh blackberries so I did not have any juice, I just added some water. The blackberry filling was good, but the biscuit top didn't really have any taste. We like a sweeter biscuit on top.
     
  2. This was a spectacular cobbler. I love blackberries and this is a very comforting recipe. The berries are tart and tangy, in a slightly sweet sauce. The topping is light and delicious.   3. I made this for one, so cut the recipe down. It was a very yummy blackberry cobbler, not too sweet. I used fresh blackberries, so was a bit confused about where I was supposed to get the blackberry juice to mix with the water. Other than squishing some of my beautiful berries, I didn't get it! I just used water, and the water that dripped off my washed blackberries. Regardless of the confusion, my blackberry cobbler turned out wonderful, especially after I added a scoop of vanilla ice cream! Thanks for sharing BakinBaby!
     
  4. I used frozen blackberries, raspberries and blueberries to make this delicious cobbler. The biscuit topping was so good and the fruit juicy, but not runny. Thanks.
     
  5. YUM. I used frozen berries. This was easy and quick to make. The cornstarch/juice mixture thickened up perfectly, even though I used only 1/2 cup sugar, (my berries were very sweet to begin with, and I like a little tartness in my pies.)
