Baked Zucchini Chips

"A delicious, quick and healthy way to use zucchini! I have also used yellow squash instead. This is also great cooked on the George Foreman. I heat mine to 450 deg and cook about 15-20 minutes, or until lightly browned."

  1. I used Panko for the bread crumbs because it was so quick. 5 minutes on side, 7 minutes on the other. A great way to use up a zucchini!

  2. I used Italian herb bread crumbs & extra parm. Oh man, so good. Didn't flip the zucchini & one side was more crunchy; think I'll try this with summer squash since they are larger & will be easier to flip over mid baking.

  3. Good and easy. Will add a little dried parsley next time. Thanks for the recipe.

  4. i of course added extra parm! more cheese makes everything better. we really liked this! instead of seasoning with pepper I used some cavendar's greek seasoning which i use on EVERYTHING. My DD said to tell you thank you "thank you thank you this was so good" (she is 10). this fit in with our nutrition plan. we had this with sauteed asparagus and shake-n-bake chicken breasts. I had to cook at the same time as the breast and same temp (400) so I cooked them for 25 minutes. drizzled the foil lined sheet with olive oil. flipped about the last 10 minutes. Thanks so much

  5. I have used same recipe but fried them. We love the zucchini that way but I have hesitated to make it too often since we try to limit fried food. This is a great alternative and I can't wait to make them. Think I will make tonite for the grandkids. Thanks
