Who knew zucchini could be so yummy! So easy to make and takes no time. Make sure you put enough butter because if you don't they burn really badly - still tastes good but just a little crisper. Thanks!

This was good - even my Dh who isn't crazy about zucchini liked it. I did cook it for less time or it would have been way overcooked. Very easy to make.

Good, but next time I'll cut the cooking time in half. They were really mushy at 35 minutes.

This was good! I cut my zucchini too thin, so they ended up looking kind of wrinkled, but tasted good! I used oregano, garlic powder, onion powder, a little parsley-just to mix it up. A great recipe!

I had to change the recipe just a bit. I only had one zucchini, so I added 3 yellow squash to the mix, creating the same volume as the 2 zucchini called for. I was very pleased with the visual outcome, the green mixed with yellow was very pretty and the squash worked out fine as far as texture and taste goes. I was unhappy with the oregano. I felt it overpowered the zucchini and squash, so unless you just LOVE the taste of oregano I would cut down on that. I am not giving up on this recipe yet, but the next time I make it I am eliminating the oregano completely and substituting with less something powerful. I will also continue to mix the yellow squash in.

Excellent use of those never ending zukes. I followed the recipe and added an orange pepper I had on hand. Did them in a pie plate in a convection oven that managed to char some of the pepper. Great veggie for any dish I'd say. Thanks Kaarin

I've made this several times and could have sworn that I already reviewed it, but I guess not! This is delicious!! I wanted to make it again tonight to go with our steak and shrimp dinner, but I'm afraid I don't have enough time left before the meat is ready. Darn! This is probably my favorite way to eat zucchini though!

Very good, but I do think it was too long baking, seemed mushy. Perhaps less oil or butter would be fine as well.

I made these a few weeks back after reading Evie's review. These are great. Really livens up the old zucchini. Love the flavour the oregano gives to the dish. Thanks for posting.

Great dish, I used olive oil, added 1 clove of garlic and dried oregano. Let the zucchini sit for a couple minutes prior to placing them on the tray, so the zucchini would absorb all the flavors. Added freshly shredded parmesan before putting it in the oven.
