ingredients
- 1 medium chopped zucchini
- 1 chopped bell pepper
- 2 cups spinach
- 1 cup chopped mushroom
- 1 chopped tomato
- 1⁄4 cup thinly sliced vidalia onion
- 1⁄2 cup reduced-fat feta cheese
- 2⁄3 cup low fat cottage cheese
- 1 (16 ounce) carton Egg Beaters egg substitute
- 2 tablespoons reduced-fat parmesan cheese
directions
- Preheat oven to 375. Chop all vegetables and put in a bowl. Season with salt and pepper (or other seasoning) to taste. Add egg beaters, then feta and cottage cheese. Mix well.
- Coat baking dish with cooking spray. Pour mixture into dish. Top with parmesan cheese. Bake for 45 minutes or until lightly brown on top.
