  • Preheat oven to 375. Chop all vegetables and put in a bowl. Season with salt and pepper (or other seasoning) to taste. Add egg beaters, then feta and cottage cheese. Mix well.
  • Coat baking dish with cooking spray. Pour mixture into dish. Top with parmesan cheese. Bake for 45 minutes or until lightly brown on top.
