Baked Vanilla Salt Tofu (Vegan)

Normally I like to grill tofu slices on my George Foreman grill for speediness and a nice crisp to the edges. But for this one, I really wanted to go for a smooth texture hence baking it for a longer time yields that, but feel free to grill it! I was inspired to come up with this by seeing how many Japanese confectionary recipes there are that call for using vanilla and/or caramel with salt. The main things with this recipe though? Use a neutral oil, olive oil would take away from the flavors, and coarse sugar and salt; table sugar and table salt really wouldn't be the same. Prep time doesn't include time for drying out tofu.

Phenomenal recipe: tastes and looks great. I did alter mine a little - I substituted brown sugar, used reduced sodium soy, and left out the salt. (Personal preference - I try to avoid salt when I can.) Delightful meal that got me thinking about all the spin-off recipes I'm going to attempt in the near future.

  1. Dry out the tofu thoroughly either by the press method or microwave method.
  2. Cut into slices, one brick gives you about 8-10.
  3. Mix the other ingredients together in a small bowl to make a marinade.
  4. Lay out the tofu slices in a baking dish (like 11 x 7 or 9 x13) and with a pastry or BBQ brush, brush the slices evenly with the marinade, on each side.
  5. There should be some marinade left-- evenly pour it over the tofu slices and throughout the bottom of the baking dish.
  6. Bake at 400F for 20 minutes, then flip the slices over to bake again for another 20 minutes.
