  • Preheat oven to 400 degrees. Combine all ingredients (without topping) and use your hand to form into 2-1/2 inch diameter balls. Roll the meatballs in the almond meal topping and place them on a cookie sheet. Makes 15 meatballs. Bake 20-25 minutes, until browned and cooked all the way through.

  1. I needed a paleo turkey meatball recipe and this one was easy to prepare and tastes delicious! I added two Italian turkey sausage links (casing removed) and used a smaller scoop (1 1/2 inch) to make the meatballs. It yielded 25 meatballs, but keep in mind I added the two links of turkey sausage. I had to make additional almond flour "crumbs" but this was easy enough to do. I like it because it is simple and has all the ingredients I have on hand.
     
  2. These were the simplest meatballs to make. The family loved them. I eased off the oregano in the coating for the 3 year old twins because they can be a bit picky about anything that looks like "spice" and they devoured them. Went over well with my somewhat picky hubby too. I used almond flour vs. almond meal. This is a new favorite. Thank you for sharing it :)
