We were having family come to town and I knew white potatoes weren't going to be diet-friendly, so I chose this recipe. It's the first time I've made sweet potatoes at home because my family doesn't like sweet potatoes. Well, this is the recipe that changed all that! DH couldn't stop raving about how good it was, and said he wished I'd made more! I'll definitely be making these again and again. i was looking forward to an easy recipe cuz i LOVE sweet potatoes...i put 3 pretty big ones in for 9 min just in case 12 was too much and they were ruined. it was way too long :( very disappointed
I was very impressed and surprised by this recipe. We've been trying to eat more sweet potatoes in place of normal potatoes. I love the topping on these...gives it a great kick of flavor! Don't let the fact that they're made in the microwave deter you...they taste great! I've been making this recipe quite often as a super quick and yummy side for quick weeknight meals. Mmmm, this is so good. The pecans really add a wonderful flavor. I did not toast them, though, but used them right out of the bag. I did add just a hint of cinnamon and it was perfect! Thank you for the wonderful recipe. It is so quick and easy using the microwave to cook the potatoes. I'm sure I will make these again and again.
I always cook my sweet potatoes in the microwave...it's so easy not to. I top mine with light butter, splenda brown sugar and cinnamon. I had never thought to add PECANS! DELICIOUS! I'll make sure to add them in the future too. Thanks for a great addition.
I loved this topping for our sweet potatoes. The crunch and sweetness was just right. Toasting the pecans in the nuker was a great tip. I think that not melting the butter completely gave it a different consistency that was really nice. I will certainly make this again. One thing I did differently was that I baked my sweets in a crock pot on low for about 4 hours. Super easy and super tasty. Thanks for a recipe that makes sweet potatoes a real treat.
