    Baked Sweet Potato "hash"

    I made this up when I had leftover jimmy dean sausage to use. It's good for any meal of the day! Really you could use any type of sausage- Italian or Chorizo ( Spanish sausage) might add a different flavor! The seasonings/ herbs: you can add as much or as little as you want- depending on your taste. The baking/ cooking time is approximate- I did this in a dorm kitchen so the oven cooks a little faster.

    Directions:

      Preheat oven to 325.
    2. 2
      Spray a 13x9 inch brownie pan or casserole dish with cooking spray or line it with tin foil.

      Combine the garlic, basil, allspice, and cumin together in a small bowl. Set aside.

      Wash and scrub the Sweet Potatoes ( you can peel them if you'd like but it's not necessary).
    5. 5
      Slice the sweet potatoes into cubes and place into the prepared baking dish.
    6. 6
      Slice the onion ( leave as large slices).

      In a medium skillet, cook and brown the sausage over medium-low heat.

      Once the meat is thoroughly cooked through add the onions and the brown sugar (Do not drain the meat as it is used for the sauteing).

      Saute for five minutes just so that the flavors mix.

      Spoon/Scrape fry pan mixture into the baking dish of sweet potatoes- stir to combine.

      Pour the seasonings over the mixture and, again, stir to combine. Make sure the seasoning has covered the entire contents of the pan.

      Place tin foil over the baking pan and set in the oven.

      Bake for 30 minutes or until the sweet potatoes are soft.
