  1. Put the prepared potatoes in a buttered 1 quart casserole. Simmer the onion in butter. Sprinkle the onion, bread crumbs and cheese over the potatoes. Combine the eggs, sour cream, salt and pepper and pour over the potatoes. Top with more grated cheese. Bake at 350° for 25-30 minutes or until thoroughly heated.
