  • In a bowl mix first 8 ingredients.
  • Add 4 Tbsp butter and and toss lightly to coat.
  • Pat salmon dry.
  • Place skin side down in a greased baking pan.
  • Brush with 2 Tbsp butter; cover with crumb mixture.
  • Bake at 350°F for 25 minutes.

  1. This is a great tasting, and simple to prepare recipe. Put it over a little prepared spinich and it reminds me a lot of a Maggione's dish I love that goes for $22. It has a nice crisp crust with good, complex flavors. My personal tastes called for half the garlic and half the butter. I like less grease, and just enough garlic to complement the other flavorings without overwhelming them. I'll be making this many times in the future. Thanks, Inez!
     
  2. This is an outstanding way to cook salmon. Very easy to make, too. I lightly brushed the salmon with the melted butter and didn't use all of the remaining 2 tablespoons. The crumb crust was wonderfully seasoned and crunchy. An elegant entree. Thanks Inez.

  1. Most excellent salmon! I have made this at least 4 times with great results. I use oregano instead of rosemary. Lightly brush salmon with garlic lemon butter and substitute olive oil in panko bread crumb mixture. My steak and potatoes husband loves it too. It is good left over and I have also made salmon salad for crackers or sandwiches with leftovers. Thanks so much for posting this one.
     
  2. Absolutely delicious. To lower the calories I used whole wheat bread for the crumbs, olive oil instead of the butter, and butter flavored spray on top of the fish.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
