Baked Salmon Patties or Muffins

Lower fat version of salmon patties that we like. The muffin tin method is one I saw in a Taste of Home recipe.

These baked up nice & crispy which was a welcome plus. The recipe is easy to follow and the salmon cakes had a nice texture and held together beautifully. . Next time I would add more of the Old Bay to perk up the flavor a bit. (Note: I tend to use more seasonings as I reduce salt wherever possible.) I didn't make the sauce portion of the recipe. I served with cocktail sauce instead. Thank yo for sharing a recipe I'll use again!

  1. Drain salmon and remove skin and bones.
  2. Mix all salmon pattie ingredients except for panko crumbs and add those to get a moldable texture.
  3. Spray a nonstick muffin pan with vegetable spray - about 7 out of 12 muffin cups.
  4. Add mixture to fill each cup, just short of full and top with panko crumbs.
  5. Spray tops with vegetable spray and bake in a 375F oven for about 20 minutes or until 160F internally.
  6. Meanwhile, mix the sauce ingredients until smooth and chill.
