      These are a quick and healthy way to make plantains. I like Kerfufle's idea to squeeze lemon or lime on them. I, also, sliced them thinly.

      This was quick and easy. Next time I'm going to use non stick foil and spray it before putting the plantains on. I only sprayed & sprayed thoroughly with oil, but the pieces were sticking to the foil like mad. I like the taste and it is a healthy way to prepare plantains. Thank you

      Savory and delicious with a squeeze of lemon, or lime, to tone down the bite of the cayenne pepper! I sliced the plantains about 3/8", thinner than specified in the recipe, and roasted them at 425F for 15 minutes, turning them once! Recipe made for tagging a chef beginning with the letter M in the Zaar Chef Alphabet Soup game in Cooking with Friends ~
