Baked Rice Pudding With Cranberry and Banana

A special feel good pudding. Not only is this better for you than traditional versions but bananas also contain the amino acid Tryptophan which promotes serotonin production to help you cheer up and be happy!

  1. Heat oven to 180C/350F.
  2. Mix the milk, cinnamon, honey and nutmeg.
  3. Divide the rice between two ramekins. Pour over the milk mixture and bake for 30 minutes.
  4. Coat the banana pieces with the brown sugar and place in the oven 5 mins from the end of cooking for the pudding.
  5. Remove puddings CAREFULLY! and serve topped with the banana, nuts and cranberries.
