This is my family's favorite potato soup. I have made it for many occasions and people always enjoy it and ask for the recipe. The recipe comes from Menus for Moms:

Enjoyed this soup very much & even made the whole batch, although it was just for the 2 of us! Something I'll be making again, too, for sure! However, don't discard the scooped out potato haves, but rather butter the inside & bake them briefly in the oven until slightly crisp! Then either enjoy them just that way, or find a suitable dip or a chicken, tuna or seafood spread & snack on 'em! Thanks for sharing the soup recipe! Ingredients Nutrition

  1. Cut potatoes in half lengthwise, scoop out pulp and set aside. Discard skins. Melt butter in a saucepan over low heat. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly until mixture is thick and bubbly. (This will take some time.).
  2. Add potato pulp, salt, pepper, 2 tbsp green onions, 1/2 cup bacon, and 1 cup cheese. Cook until cheese is melted and soup is heated through. Stir in sour cream. Serve with remaining green onions, bacon and cheese as a garnish.
