Easy and delicious. I omitted the salt (personal preference). I did, indeed, have leftover baked potatoes, so this was nice and quick to prepare. Yummy soup! My grandson had 2 large helpings, lol. I made this pretty much as directed except that I microwaved the potatoes as I was running short on time. Loved this soup! I had some Twice Baked Potato Casserole leftover so I used that instead of baking new potatoes. The potatoes still had the skins on them but I don't think it altered the flavor any. I had used turkey bacon in the casserole but since I needed drippings for this recipe I used regular bacon and followed the rest of the recipe as stated here.
