This is an awesome, hearty soup. We prefer to serve with corn muffins and a tossed salad...

Ingredients Nutrition


  1. Fry bacon until crisp.
  2. Chop bacon and reserve drippings.
  3. Cook onions in remaining drippings over medium-high heat until transparent, about 3 minutes.
  4. Add flour, stirring to prevent lumps.
  5. Cook 3- 5 minutes until mix just begins to run golden.
  6. Add chicken stock gradually, whisking to prevent lumps, until liquid thickens.
  7. Reduce heat to simmer and add potatoes, cream, chopped bacon, parsley, garlic, basil, salt, pepper sauce and black pepper.
  8. Simmer 10 minutes; DO NOT ALLOW TO BOIL.
  9. Add grated cheese and green onions.
  10. Heat until cheese melts smoothly.
  11. Garnish each serving as desired with chopped bacon, grated cheese and chopped parsley.

This is a wonderful rich and tasty soup. Taste just like a fully loaded baked potato. It was easy to make and family just loves it. I took it to the office to share with co-workers and they were in awe. EVERYONE asked for the recipe. Thanks for sharing.
