1. So, so, so good. I used baby yukon gold potatoes in this and was very happy with the result. Made a mix of the green onion and bacon, but also added shredded cheddar cheese for the topping. Looking forward to the leftovers tomorrow. Thanks Post Time.

 2. Wow, this is so good! Rich and satisfying, right down to the last spoonful! I easily halved the recipe and loved the skins left on the potatoes as well as the addition of paprika, yum! Thanks for sharing :) Made for PAC Spring 09

 3. For just 2 of us, I cut this recipe down by half, using 1 large potato! I really appreciated that the potato was used unpeeled! A VERY, VERY NICE COMFORT FOOD, & a recipe that's a keeper! [Tagged, made & reviewed for one of my adoptees in the current Pick-A-Chef]

I'm 58 and disabled. I'm not real sure how disabled, since I'm quite sure I'm not useless. I worked in insurance for over 20 years, 12 as the manager, and before that I was a sailor on a nuclear submarine. I had 4 kids, two were inherited when I got married, and two more that are way too much like me. One of my inherited kids has since passed away. I like to read, play golf when I can, and I love to fish. I am generally handy and firmly believe that if I can find a book to tell me how to do something, then I can do it. I have been married to the same woman for the last 30 years, and it looks like we're stuck with each other. I'm a happy person, grateful for what I have, but generally not requiring a lot. Watching my trees grow and my flowers bloom is what I call relaxation. The only thing that makes that experience more enjoyable is to have my dog Dixie near by. I like good cigars, Arturo Fuente 8-5-8 maduro as a matter of fact. I wear a hat like Indiana Jones wears. I like to cook for my wife, but she doesn't always like it. I'm very easy going, almost never pretentious, and I like everybody I meet.
