Super Easy! Super Tasty! The great thing about this recipe is that I saved the skins from the potato and used them the next with the remaining bacon, cheddar and sour cream for potatos skins. Two meals in one! Excellent taste... I did add a bit more salt and pepper.

Made this last night it's the best potatoe and broccoli soup I made. Hubby isn't a big soup fan but he loved this. Served it grilled cheese(pepper jack)sandwitches. Thanks for posting.
I had a bunch of leftover baked potatoes and my neice loves stuffed baked potatoes, so I thought I'd take a crack at this recipe. It turned out great. Everyone loved it. I did one thing differently, and one thing "wrong". I left out the brocolli, which I don't care for. And instead of removing the cooked bacon before sauteing the onion, I left it in. My sister said it was too "wobbly" and would be much better had it been crisp. But this could not have been an easier soup to prepare. I highly suggest you try it.
You're right this soup tastes just like a loaded baked potato! My DH was so impressed, and my 4 yr old even requested to take it in her lunch today versus PB&J...her usual. I changed a few things to suit our family..like I boiled the potatoes, kept the skins on and added more salt. This is something I never thought I would ever make, but it turned out wonderfully! Thanks so much!!
