  • 2 lbs new potatoes
  • 12 cup butter, melted
  • 12 cup green onion dip
  • 13 cup chile con queso
  • 2 green onions, including stems, chopped
  • 1 cup four-cheese Mexican blend cheese, shredded
  • creole seasoning (I use salt free)

directions

  • Cube& boil potatoes with skins, drain.
  • Mix all remaining ingredients together; stir in potatoes.
  • Put everything in casserole.
  • Top with more Mexican 4 cheese to cover.
  • Sprinkle with Creole seasoning.
  • Bake at 350 till golden (about 20-30 minutes).

We live in a great neighborhood just outside of San Antonio. We are retired and entertain a lot in addition to having family & children around whenever possible. I grow my own vegetables and herbs. I like to go to the Hill Country for fresh peaches and love to can them for year round use.
