A baked potato with all the trimmings in a casserole. A good tasting side dish. Makes a nice side on a buffet, or potluck.
- 5 large potatoes, cooked and diced
- 6 slices bacon, cooked and crumbled
- 1 1⁄2 lbs shredded cheddar cheese
- 1 pint sour cream
- 2 bunches chopped green onions (, sautéed in bacon grease)
- salt and pepper
- Mix all ingredients.
- Pour into casserole and bake 30 minutes at 325 F.
I made this for dinner. My husband enjoyed it. He sprinkled red pepper on it. I thot it was a little blah and needed something but I don't like the red pepper. I think when I make it again I will add some garlic powder or something to spice it up a bit.
I've said it once and I'll say it again: THIS DISH IS SUPER!.....I use bacon bits though because it's quicker and since we LOVE cheese I add lots more... This has become a regular dish in our home! Thanks so much...
My kid sister made this for our older sister's surprise 60th birdthday party. It was so good even my young grandkids were trying to get the green onion scraped off of it to get to the potatoes. This one is a keeper...thanks for sharing!!
