A baked potato with all the trimmings in a casserole. A good tasting side dish. Makes a nice side on a buffet, or potluck.

I made this for dinner. My husband enjoyed it. He sprinkled red pepper on it. I thot it was a little blah and needed something but I don't like the red pepper. I think when I make it again I will add some garlic powder or something to spice it up a bit.
- 5 large potatoes, cooked and diced
- 6 slices bacon, cooked and crumbled
- 1 1⁄2 lbs shredded cheddar cheese
- 1 pint sour cream
- 2 bunches chopped green onions (, sautéed in bacon grease)
- salt and pepper
