I love baking potatoes in the crockpot because it doesn't heat up the house. Mine were done on low in 8 hours. Topped with Smart Balance Light Omega 3, light sour cream, chives, and fat free cheddar cheese.

This was one of my favorite meals growing up! :) I got a crockpot for Christmas and this was the first recipe I wanted to try with it. These potatoes came out wonderful! The olive oil & salt/pepper combo gave them great flavor. We topped ours with shredded swiss cheese. DH loved it! Thanks so much for sharing!

There is no other way to make baked potatoes than in the crockpot. You don't have to hit up the oven. I have two crockpots going most of the time. IT is nice to come home and have your meat and potatoes done at the same time. The only change I made was rub the potatoes with butter.
